Our delicious recipe for Dairy Free Chocolate Fudge Cake with Almond Fresh PLUS an exciting contest (see below)!

A few months ago, after the birth of my first child, I had to go lactose and dairy free, and not by choice. It was a sad day because if you know me at all, you know that I love everything dairy: cheese, milk, ice cream, and did I mention cheese? But as many new moms can tell you, sometimes your baby can’t digest certain foods properly through the foods you eat while nursing, and for my newborn, it was dairy.

I had to bid farewell to all my favourite foods and I was not a happy camper, that is until I picked up some Earth’s Own Almond Fresh Almond Milk at my local grocery store. I’ll be honest with you – I was really hesitant on trying Almond Milk because I was skeptical on how good it would actually taste. Lucky for me, it was delicious and filled the dairy-void in my life!

Slowly over the last month, I’ve introduced dairy and lactose back into my life, but I still pick up a carton of the vanilla or chocolate Almond Fresh with every grocery run for smoothies and the occasional dessert. One of my favourite things to bake with it is a delish Dairy Free Chocolate Fudge Cake with Almond Fresh – it’s actually so good that you may end up eating more than just one slice.

I’ve made it before and everyone loved it, so it’s in high demand for Eid-ul-Adha later this week! I like to make cupcakes rather than a big cake because it’s easier to give out, and since it’s also Back to School time for the little ones, it’s a great snack to pack for lunch boxes. Just make sure you keep an eye on it in the oven: cupcakes bake quicker than a large cake!

Here’s the recipe, which I altered slightly from the original that you can find on the Almond Fresh website – give it a try and let us know what you think.

Dairy Free Chocolate Fudge Cake with Creamy Chocolate Almond Frosting

Cake:

  • 3/4 cup unsweetened cocoa
  • 2 cups all purpose flour
  • 1 3/4 cups granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup strong freshly brewed coffee
  • 1 cup Almond Fresh Vanilla
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp white vinegar

Frosting:

  • 3 1/2 cups confectioners’ sugar, sifted roughly
  • 2/3 cups cocoa powder
  • 1 tsp salt
  • 1/2 cup butter at room temperature
  • 1/2 tsp pure vanilla extract, we recommend Blossom & Bean Alcohol-Free Vanilla Extract
  • 4-5 tbsp Almond Fresh Vanilla

Dairy Free Chocolate Fudge Cake

Cake Instructions:

  1. Preheat oven to 350°F.
  2. Line two cupcake trays with liners – the batter should make just less than 24!
  3. Sieve dry ingredients and set aside.
  4. In a separate bowl mix wet ingredients. Combine wet and dry ingredients and mix until combined.
  5. Pour into pan and bake until cupcake springs back when lightly touched – the recipe says 45 to 60 minutes but mine were done in 10!
  6. Cool and frost.

Frosting Instructions:

  1. Sift together confectioners’ sugar, cocoa powder and salt.
  2. In a separate bowl mix together butter, & vanilla extract, and 1/3 of dry ingredients. Add additional third of dry ingredients with 2 tbsp Almond Fresh and mix until thoroughly incorporated.
  3. Add last third of dry ingredients, and 2 tbsp of remaining Almond Fresh and mix until thoroughly incorporated. If frosting is too stiff add additional tbsp of Almond Fresh (which I do end up doing every time I make the frosting!)

Sprinkle the top with crushed almonds or almond slivers.
