Ladypreneur Ramadan Recipes: Apple Salad
Fruit for iftar is imperative, especially in the summer. They hydrate quickly, boost your low blood sugars, are full of vitamins and are just plain refreshing. My two favourite fruits are apples and watermelon. Amazingly, our next two Ramadan recipes include both of those delicious and juicy fruits.

I love this recipe because it brings a refreshing coolness when you break your fast. Its sweet and savoury, and above all it is a healthy way to break your fast in comparison to the deep-fried dishes many of us are accustomed to.
Apple Salad – Iftar
- 2 apples (peeled, cut into small pieces)
- 1 cucumber (peeled and cut into small pieces)
- 1 small can of chick peas
- 1 small can of Kidney beans
- 3 Tablespoons of Yogurt
- 4 Tablespoons Mayo
- 1 Teaspoon honey
- 2 teaspoons lemon juice
- 3 tablespoons Sultana Raisins (optional)
- Pepper to taste
Mix all ingredients together, refrigerate and serve chilled.
