Recipe: Quick Tortilla Rolls
If I had a nickel for every time I’ve had guests just pop by, I’d have my own chef to whip up fabulous meals for them! My Quick Tortilla Rolls have saved me many times and was actually created in desperation when some visitors came by one summer afternoon. I usually always have these ingredients handy, which makes it perfect for saving the day!
This recipe only has 4 very basic ingredients and takes less than 10 minutes to prep and bake. Whenever I get requests to share the recipe, no one believes at how simple it is!
10 tortillas (large size is easiest)
1 16oz tub of sour cream
1/2 – 1 jar of jalapeño (depending on how much of a kick you want!)
1 pack of shredded cheese blend
In a blender or food processor blend sour cream and jalapeño. Spread sour cream and jalapeño mixture evenly over entire tortilla. Sprinkle cheese all over and roll up tortilla. There should be sour cream and jalapeño mixture right up to the edges so that when you roll, it sticks at the end without the need of any toothpicks. Place rolled up edge down on baking sheet and bake for 5 minutes on 350 degrees until tops slightly brown. Take out of the oven and let cool for 5 minutes and slice 1 inch pieces. Serve with left over sour cream and jalapeño mixer as a dip.
Tip: since the mixture is light in colour, try to get the spinach tortillas so it is a bit more visually interesting once assembled and cut, or garnish with some cilantro as the picture shows.
